Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup chocolate 180 protein powder
  • 1/4 cup plain yogurt
  • 4 tablespoons honey
  • 1/3 cup organic cacao powder
  • 1/4 cup almond milk
  • 1 large carrot, grated
  • 1/2 cup walnuts
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Makes 10 slices

Method

  1. Preheat oven to 175°C
  2. Combine all ingredients in bowl and mix with a hand blender or you can fold it with a wooden spoon
  3. Grease a metal tin loaf tray with oil spray of your choice (or coconut oil or butter)
  4. Pour the batter in the metal loaf tray
  5. Bake in preheated oven for 35-40 minutes or until a toothpick inserted comes out clean
  6. Remove from oven and flip your loaf out onto a cooling tray

Notes

  • You can add some extra walnuts on top of the loaf before baking to decorate the cake
  • You can add nutmeg, cardamom or cinnamon to give it a little spice
  • Serve with cottage cheese drizzled with honey

Made this walnut slice this afternoon but will add some spices to it next time. Still very yummy but would also use silicone bakeware as it all fell apart when I tried to get it out of the loaftin. Had sprayed with coconut spray but to no avail. Will also add the walnuts to the top before I bake it…
