Emma: They hold together well and are good for savoury or sweet options. The prep time is about 10mins and cooking time is 1 min per wrap. This recipe makes about 6 wraps – these are best eaten fresh so if you want to halve the recipe, use two small eggs – the mixture is better off being extra soft than too dry.
Other filing ideas are: Savoury – Bacon, chicken or mince, avocado, tomato, lettuce, garlic aioli. Sweet – Berries and cream
Ingredients
Base:
- 2 level scoops coconut 180 Superfood, equal to 1/2 slightly heaped cup (could use chocolate for a dessert option)
- 1 level scoop coconut flour, equal to 1/4 slightly heaped cup
- 3 eggs
- 1 Tbs melted coconut oil or butter
Optional (savoury):
- 1/4 cup finely grated cheese
- Big pinch paprika
- Pinch sea salt
Optional (sweet):
- 1/2 tsp vanilla powder and/or 1/2 tsp cinnamon
Method
- Heat a heavy based pan over low heat
- Sieve 180 Superfood and coconut flour into a bowl
- Add cheese and paprika or vanilla and cinnamon (if using)
- Add eggs, salt and oil/butter
- Mix with a wooden spoon until completely combined
- Tear off two squares baking paper. Put a golf-ball sized ball of mixture onto one piece of baking paper, squash it down and them put the other piece on top. Roll mixture through baking paper to about 2-3mm thick, will be about 20cm in diameter
- Keep in baking paper and place in pan, it will start to go lighter in colour and lift away from paper. Flip and cook until whole wrap has changed colour (about 1min each side). Keep in pan until just cooked – if cooked for too long it will be more prone to cracking
- Remove from pan, lift off top piece of baking paper and gently roll wrap
- Place on a clean tea towel and cover to keep warm and moist
- When ready to serve, gently unroll and fill with desired ingredients

I buy both 180 Nutrition choc & coconut flavour Pea Protein and always have both in my cupboard. I absolutely love these products and would love recipes and ideas on what I could make using these products.
