Healthy paleo carrot cake recipe

“Hey 180 Team, Im just writing to say thanks for a great product and that I’ve also found/created, a kind of awesome recipe. Im sharing it because, who can have enough recipes? Also would like to know what you think (if you make it!).

Personally I still weight a bit more than I plan to, but after injuring my shoulder I’ve signed up for the city2surf and have started my running training, along the the diet I am doing/planned im sure the KGs will come down to where I want them (about 10kg down) before the event. Things are pretty good!

 

So here is the recipe! Ive nicknamed this OWG-180 Cake/Slice! Awesome for my sweet/snacks between meals (i think) – Bradley”

 

 Ingredients

  • 2 x carrots (1 grated, 1 blended)
  • 1 cup 180 protein coconut or chocolate flavour
  • 1 cup desiccated coconut (or coconut flakes/shredded )
  • 1 tspn cinnamon
  • 1-2 tspn grated ginger (approx)
  • 1 tbspn coconut oil
  • 8 dates (approx)
  • 1/2 – 1 tspn baking powder
  • 1/2 – 1 tspn of bicarb soda
  • 1/2 – 1 tspn nutmeg
  • 1/2 an orange grated zest
  • 3 eggs
  • pinch of salt

Optional ingredients

  • 1 tspn organic vanilla extract
  • 1 tspn maca powder
  • 2 tbspn Rice malt (fructose free) or honey
  • 135g walnuts (approx smashed up a little)

Method

  1. Preheat the over to 170 degrees (fan forced)
  2. Add all the dry ingredients together in a bowl including grated carrot, spices, 180 protein etc, except the walnuts.
  3. Add all the wet ingredients to a blender (orange,honey, vanilla,eggs,dates) and 1 carrot also. (grate the other). Blend until a is a relatively smooth mixture.
  4. Pour over wet mixture. Mix with a spoon until you have a loose batter. It it’s to  loose, add some more coconut flour.
  5. Add in the walnuts, a little crushed. And lay out on a prepared slice tray.
  6. Cook for 30-40 mins (depending on the thickness of your slice. Mine usually take around 35mins.
  7. Enjoy this carrot like cake!

A couple of notes:

With the 1/2 – 1 tspn im pretty relaxed relaxed about the measurements. Guess it depends on what you like 🙂

Also the baking time may differ depending on thickness. It turns out quite moist!

The method mentions honey but it is not included in the ingredient list. How much should I use? Looks very yum.

I made this carrot cake last night. I have been searching for a breakfast friendly recipe, something small I can take to work as I don’t have a huge appetite in the morning.

I have tried various muffin, slice and cake recipes and stumbled upon the 180 protein powder in my quest to find a tasty protein powder which didn’t make my food taste like artificial vanilla!

I used the 180 chocolate powder, honey and vanilla in my version of this cake and it is super tasty. I am really happy to have found something that can do double duty for breakfast or snacks and has no bad ingredients in it.

Looks great I have a quick question about the recipe, it mentions adding more coconut flour if the mixture is too wet but doesn’t mention coconut flour as an ingredient. Do you mean add more shredded coconut or more protein powder? or does it not really make a difference to the end result?
Look forward to giving it a go.

Hey Rhian, I’m not the best baker in the world & eyeball everything 😉 Coconut flour or 180 Protein would work if it’s to wet. I thing it would work better than the shredded coconut to take out the moisture … Hope that helps, Guy
