High Protein Lumberjack Cake

This is a simple and delicious high protein cake to have as a weekend treat. It’s high in natural fruit sugars so it really is a treat (unless you’re a lumberjack).  It’s delicious served hot with a little yogurt 🙂

Ingredients

  • 3 medium apples chopped
  • 1 cup chopped dates
  • 1 tsp bi-carb
  • 1 cup boiling water
  • 50g almond butter
  • 1 tab stevia
  • 1 egg
  • 1 cup coconut flour
  • 1/4 cup 180 Natural Protein Superfood (coconut)
  • 1 cup shredded coconut

Instructions

Place the chopped apples, dates, bi carb and boiling water into a bowl. Let is sit for 5 minutes. In another bowl cream the stevia and almond butter together. Add the egg and the coconut flour and 180 Natural Protein Superfood.

Drain the apple and date mix but keep the liquid to add to the overall mix if it looks dry as both the coconut flour and the 180 superfood absorb a lot of liquid.

Add the coconut and add the apple and date syrup if needed.

Place into a baking tray – loaf tin or cake tin lined with baking paper. The tin should be about 20cm in length and about 10 cm wide as a guide. If its bigger or smaller then just watch the overall temperature and time in the oven.

I put mine in a loaf tin, 180 degrees for 20min.

We made this last night and was really good! Ended up needing all of the liquid and a bit extra. Took 40 minutes to cook and added cinnamon. Served with some coconut yoghurt.
