By 180 Nutrition: We’ve become very found of the Paleo Diet and what it stands for in recent times. It’s great to be able to offer healthy alternatives like this Paleo friendly, high protein, apple cinnamon muffin to snack on over the festive season instead of a sugar loaded Christmas pudding.
Ingredients
- 1 peeled and chopped apple
- Lemon juice from one lemon
- 1/2 tbs of cinnamon
- 1/2 cup finely chopped dates
- 1/2 cup 180 coc0nut protein powder
- 3/4 cup coconut flour
- 1 1/2 cup almond meal
- 2 eggs
Step 1
Separate the egg yolks from the whites. Mix all the ingredients together along with the egg yolks.
Place into muffin cups ready for baking. You should be able to stretch it out to make 9 muffins.
Beat the egg whites until stiff then pour into the muffin mix.
Bake for about 20 min at 160 degrees.
These are delicous warm with some fresh cream or yummy yoghurt.
