Post Workout High Protein Brownie

Stu: Most of us are looking for a quick post-workout snack and sometimes it’s tricky to fill the spot. Keira Rumble has kindly shared this delicious healthy brownie recipe that tastes divine and should do the trick. Over to Keira…

Keira: These little gems are gluten free, high in protein, vegan and have no added sugar. They also keep really well in the freezer and made the perfect post workout snack/dessert, for a good two weeks. I have since done a couple variations, so stay tuned for some more brownies.

Ingredients:

  • 1 can drained organic cannellini beans
  • 80-100g Superfood Protein Blend (Chocolate)
  • 60g raw cacao powder
  • 1 large banana
  • 1 tsp baking powder
  • 1/4 cup chia seeds
  • 1/2 – 1 cup organic and unsweetened almond milk
  • 2 tablespoons melted coconut oil
  • 1 ½  teaspoon ground cinnamon
  • 1/2 – 1 cup frozen raspberries

Method:

Pre-heat oven to 160 degrees fan forced. Combine all dry ingredients and banana into a food processor. If you don’t have a food processor, you can easily mash everything up using a potato masher or even a fork.

Blitz until smooth, slowly adding the almond milk. If it is still dry, or quite thick in consistency add in some more almond milk or water until smooth. Once all combined, pour into a lined baking tray. Sprinkle over raspberries (frozen work really well so they don’t dry out the batter, the chia seeds will also absorb a lot of moisture). Cook for 20 -30 minutes or until skewer just comes out clean.

Cool on a wire rack for 10 minutes, enjoy!

Do you think this recipe will work if I switch the banana for apple puree?

I usually switch it if I make muffins etc, just not sure it will hold for a brownie.

Yep would work! However I would add a little bit more 180 to help it bind together. Would love to know how it turns out!
