Ange: These mugffins will surely make your day packed with good vibes and energy. They’re so healthy and delicious, your kids will love them too! Not only are they high in protein, they’re also rich in antioxidants too (from the berries 🙂
Ingredients
- ½ cup buckwheat flour
- 1 scoop 180 Nutrition Superfood Protein (Vegan Coconut)
- ½ teaspoon baking powder
- Pinch of salt
- 1 egg
- 1 cup soy milk- light or low sugar
- 2 tablespoons honey
- Handful of frozen raspberries
Method
- In a large bowl, mix well buckwheat flour, Superfood Protein, baking powder and salt
- In a smaller bowl, whisk egg, honey and soy milk until well blended
- Combine wet to dry ingredients. Mix well. Add raspberries
- Portion batter into two mugs**; filling it 80% to the top. Microwave for 3-3.5 minutes. Leave in mug for 1 minute then turn out onto cooling rack to cool.
Makes 2 Mugffins
- I use two 220ml short and stout microwavable mugs

For the raspberry muffins can I use coconut flour instead of the buckwheat?
It might be to heavy and absorbent?
