Baked Apple Oats

Stu: This apple baked oatmeal is a healthy and delicious breakfast recipe that your entire family will love. It’s enriched with extra protein and maca powder goodness to help you powder through your day. Big thanks to the talents of Melanie De Laine for the recipe.

Ingredients

  • 1/2 cup quick oats
  • 1/2 cup oat milk
  • 1/2 cup of water
  • 1 heaped tbsp of Whey Protein Isolate (Vanilla)
  • 1 tsp Maca Powder
  • 1 green apple
  • Dash of cinnamon
  • Drizzle of maple syrup

Method

  1. Preheat oven to 180 degrees
  2. Chop the apple in half and pierce skin with a fork a couple of times
  3. Line a tray with baking paper and add apple to tray
  4. Light coat the apple in maple syrup and lightly sprinkle with cinnamon
  5. Bake in the oven for 20-30 minutes or till caramelised
  6. Bring a pot over medium heat. Add oats, milk and half the water. Stir consistently
  7. Once the mix starts to bubble and thicken, add the rest of the water to thin, stir to combine
  8. Scoop out the flesh of 1 half of the baked apple and add to the pot
  9. Add protein powder and Maca powder. Stir to combine
  10. Once desired consistency is reached, serve the oats in a bowl, topped with the other half of the baked apple
  11. Serve with any toppings you like. Pictured here are walnuts, pepitas, hemp seeds and a drizzle of maple syrup
