Cauliflower Rice Recipe

White rice is getting a bad wrap at the moment as a carb that we should be avoiding if we want to stay slim, it seems that everyone is asking the question if rice is bad for you. This cauliflower rice recipe takes about the same time to prepare, tastes surprisingly good and doesn’t affect blood sugar levels – how good is that?

Ingredients (serves 2):

  • 1 large cauliflower
  • 2-3 tablespoons of coconut oil
  • 1 teaspoon of turmeric powder
  • Freshly ground black pepper

Method:

Grate the cauliflower using a food processor, you can use a hand-held grater if you want, it’ll just take a little longer. Heat the coconut oil over medium heat in large fry pan then add turmeric and stir through for 30 seconds.

Add grated cauliflower and black pepper then stir. You will need to continue stirring from time to time until it is cooked (takes about 15 minutes), it’s awesome – Stu
