Gluten-Free Shortbread Cookies

Tis the season for shortbread cookies! Try out this quick and easy recipe using 180 Superfood nutrition protein, available both in-store and online. 🙂

Ingredients

  • 1 & 1/2 cups almond meal
  • 1/2 cup 180 protein powder
  •  1 & 1/2 tsp cinnamon
  •  2 eggs
  •  2 tbsp maple syrup or honey
  •  Three squares of 80% dark chocolate to drizzle (optional)

Method

  1. Preheat oven to 160 degrees.
  2. Mix all ingredients together in a large bowl to form dough
  3. Roll the dough between two sheets of baking paper
  4. Use Christmas Cookie Cutters to cut dough into shapes
  5. Place cookies onto baking ray and bake in the oven for 12-13 minutes
  6. Once cookies have completely cooled, melt the chocolate and pipe onto the biscuits. Enjoy 🙂
