Bread gets a bad rap these days (and rightly so in most instances). So when Caroline came up with this high protein coconut bread paleo recipe we gave it go. It took us around 15 minutes to prepare and 40 minutes later we were spreading on the almond butter… delicious.
Ingredients
- 1 1/2 cup of dates (optional)
- 1 tsp bicarb soda
- 2 1/3 cups boiling water
- 1/2 cup 180 Natural Protein Superfood (coconut)
- 2 eggs
- 1 cup coconut flour
- 1 tsp baking powder
- cinnamon to taste
Grab your blender and throw in the dates, bicarb and boiling water and let it sit there for 5 min then blend together. Then add all the other ingredients into the blender bit by bit. Keep blending and then pour into a loaf tin.
Bake for 40 min on 175 degrees and you’re done!
Another super easy and delicious paleo recipe. There is a fair bit of fruit in this so you could leave out the dates and add a pinch or two of Stevia if you are on a weight loss plan. You could also substitute the dates for an apple or a banana.
To serve you could add cream cheese, banana and cinnamon, almond butter or just plain and toasted.
You could vary the coconut bread recipe by adding nuts to the ingredients as well if you wanted.

Looks yummy! Is this for a cheat meal? I would think it is pretty high in sugar.
Depending if you add the dry fruit or not. A pinch of stevia will do the trick to sweeten it instead of the fruit if you want to reduce the sugar/fructose amount. Hope that helps 🙂
