Homemade Hazelnut & Orange Muffins

A big thank you to Caroline Howe for the recipe and being able to make a healthy homemade muffin taste fantastic!

These are delicious for a treat or pack them in a lunch-box for a nutritious high protein snack at work or school.

Prep Time: 15 minutes
Cook Time: 20 minutes at 180°
Makes 6 muffins

Ingredients:

Preparation:

Mix these dry ingredients together:

  • 1 cup hazelnut meal
  • 1/2 cup coconut flakes
  • 1/2 cup 180 protein powder
  • 1/3 cup blueberries (optional)
  • Zest of 1 orange

Mix these wet ingredients together and then mix them with the dry:

  • Mashed banana
  • 3 egg yolks
  • Juice of half an orange and flesh
  • 1 tsp organic vanilla powder

 

Then:
Whip the 3 egg whites into hard peaks. Then fold gently the egg whites into the mixture (a metal spoon is best so you loose less bubbles). Pour the mixture into greased muffin tins, about two-thirds full. Bake at 180° for twenty minutes.
