Lemon Chia Pudding

180 Nutrition: Another great recipe from Jess @feedsforspeed, in her own words … “Some breakfast inspo for tomorrow! Make it now to enjoy cold in the morning, or whip up the warm version like I did”


  • 1/2 cup chia seeds
  • 1 and 1/2 cups milk of your choice (soy used here)
  • The zest of one small/medium lemon
  • 1/2 tablespoon maple syrup
  • 1/2 tsp vanilla extract


Pour milk into a saucer and heat it up, add the chia seeds and stir. Keep the heat low and stir regularly, after a couple of minutes add the lemon zest, maple syrup and vanilla extract. Let thicken and add a splash of milk if needed. Then add your toppings…
