Stu: A good friend Emma from over the ditch in NZ has been chewing my ear off over her ridiculously simple and healthy pancake recipe. Featuring a couple of ingredients and a healthy nutrient profile I reckon she could be right…
Ingredients (for 3 pancakes)
- 2 heaped tablespoons of Superfood Protein Blend (coconut)
- 25g melted butter or coconut oil
- 2 eggs
Method
- Heat pan to medium with coconut oil or butter
- Place spoonfuls of mixture in pan (I made mine about 10cm diameter) – may have to spread it out a bit.
- Cook until bubbles form on top then flip.
- Serve with whatever you fancy – I did coconut cream and raspberries.

I thought maybe an ingredient was missing, surely it wouldn’t turn out looking like pancakes without flour and low and behold it did and tasted amazing!

Love using 180 to make all kinds of meals, and these pancakes are the bomb!
Tried these for our family Sunday breakfast, with a slight variation… doubled the quantity and added half teaspoon gluten free baking powder and some unsweetened almond milk. Delicious topped with blended fresh strawberries with 1/2 teaspoon of coconut sugar!
I’ve been making these (ok OBSESSED with these) with my 180 protein powder. Just found out I can’t have dairy so checking out my options. Is there much flavour difference doing this with vegan protein?
There is a little difference in taste Natalie… We always recommend trying a starter pack first 😉
Just found this recipe and can’t believe how easy it is to make. My variation was to add homemade almond butter into the mix. Topped with coconut yogurt and stewed strawberries. Delicious
