Chocolate Breakfast Chia Pudding

180 nutrition chocolate chia breakfast pudding

Stu: Looking for a healthy breakfast idea that keeps you feeling full? … this chia pudding will not disappoint. It’s my go-to breakfast right now as it’s simple to prep the night before, tastes great and is really filling due to the protein, fat and fibre. It literally takes 2 minutes to prepare and saves me so much time in the morning 🙂

Ingredients (Serves 1)

  • 3 tbsp chia seeds
  • 1 tbsp psyllium husks
  • 1 tsp sesame seeds
  • 200ml coconut milk
  • 1 tbsp cacao powder
  • Handful of raspberries
  • Splash of filtered water

Method

  • Pour 200ml (1/2 can) coconut milk into a bowl
  • Add the chia seeds, psyllium, sesame seeds and cacao and mix really well
  • Now add a splash of filtered water which helps the chia seeds jellify
  • Then mix in the raspberries and ensure that all of the chia seeds are covered
  • Pop the bowl in the fridge to enjoy in the morning

It’s best served with cinnamon and any toppings of your choice (cacao nibs taste amazing).
