Stu: Looking for a healthy breakfast idea that keeps you feeling full? … this chia pudding will not disappoint. It’s my go-to breakfast right now as it’s simple to prep the night before, tastes great and is really filling due to the protein, fat and fibre. It literally takes 2 minutes to prepare and saves me so much time in the morning 🙂
Ingredients (Serves 1)
- 3 tbsp chia seeds
- 1 tbsp psyllium husks
- 1 tsp sesame seeds
- 200ml coconut milk
- 1 tbsp cacao powder
- Handful of raspberries
- Splash of filtered water
Method
- Pour 200ml (1/2 can) coconut milk into a bowl
- Add the chia seeds, psyllium, sesame seeds and cacao and mix really well
- Now add a splash of filtered water which helps the chia seeds jellify
- Then mix in the raspberries and ensure that all of the chia seeds are covered
- Pop the bowl in the fridge to enjoy in the morning
It’s best served with cinnamon and any toppings of your choice (cacao nibs taste amazing).
