Lots of people we know crave pizza. While this isn’t a bad thing, it won’t serve you well if you’re avoiding the wheat and gluten. So big thanks again to Caroline for the answer to your cravings with this paleo friendly recipe – a high protein, gluten free pizza base made without wheat or yeast. It’s pretty simple to make and is a mighty fine answer to the traditional pizza!
- 1 cup besan flour
- 1/2 cup 180 coconut protein supplement
- 1/2 cup almond meal
- 1 egg
- 3 tabs water
- 1 tab coconut oil or good quality oil of choice (like olive oil)
Here’s the plan for the base…Put the dry ingredients into a bowl, add the egg and water. Mix, knead and flatten out onto a tray lined with baking paper. You are better off making smaller multiple pizza bases as opposed to one larger one. This way the base stays bound much better.
The toppings… This is where you can have what you want. I put on a tomato based sauce (sour cream instead is really nice too), left over lamb, parsley, feta and parmesan cheese.
Bake at 200° for 15min and you’ll have a delicious high protein gluten free pizza! A beautiful addition to your pale recipe repertoire.
